Banana Walnut Bread


NEVER toss your ripe Bananas! They're a naturally sweet secret weapon in so many delicious recipes and especially loved in my Banana Walnut Bread.

The INGREDIENTS:

1 Tbsp Butter, to grease pan

2 VERY Ripe Bananas

2 Eggs

1/4 Cup Butter, softened

1/4 Cup Avocado Oil

1 tsp Vanilla Extract

1/2 tsp Baking Soda

1/2 tsp Salt

1 tsp Ground Cinnamon

1/2 Cup Quick Oats

1 Cup Flour

3/4 Cup Sugar

1 Cup Walnuts, chopped


Let's Make it:

Preheat oven to 350ºF. Grease 8 x 4" loaf pan, set aside. In a large bowl mash the Bananas. Add in eggs, butter, oil, and vanilla. Whisk until well combined. Add in baking soda and cinnamon. Whisk until combined. Add in oats, flour, sugar. Whisk until just combined. Fold in the nuts. Pour batter into prepared pan. Give it a shake to even out the batter. Bake for 60 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes. Remove. Slice.
