Chicken Chili

Let's whip up some Chili. This is the perfect fuel to make for a healthy grab and go lunch. Balanced with all the Protein, Fat, and Carbs you need to stay strong.
Servings 4
Ingredients
2 Tbsp Olive oil
1lb Ground Chicken
Salt & Pepper. Big pinch
1 Red Pepper, seeded and chopped
1 onion, chopped
1-15oz Can Fire Roasted Tomatoes
1-4oz Can Green Chiles
3/4 Cup Water
1 tsp Cumin
1/2 tsp Chili Pepper (add more if you hot!)
1/2 tsp Smoked Paprika
1 tsp Garlic Powder
Let's Cook:
In a pan over med heat, add two tbsp of olive oil. Add in the ground chicken. Break up and sauté the meat until cooked through. Add in onions, peppers, beans, fire roast tomatoes, chilies, and seasoning. Give it a good stir to combine. Add in liquid. Stir again. Bring to a boil and then allow it to simmer for 30 minutes.
Serve it up with your favorite toppings such as jalapeños, radishes, shredded cheese, cilantro, lime wedges.
