Tomatoes and Angel Hair...The Ultimate Summer Pasta!

I love simple food and it doesn't get more simple than summer tomatoes and pasta. The flavor of homegrown summer tomatoes is heavenly! When tomatoes are at their ripest, make a batch of this fresh simple sauce. Don't be afraid to use tomatoes that are cracked, bruised or imperfect as these make the best sauce. The flesh of the tomato should be dense, sweet and blood red. This makes a very fresh and bright tasting sauce. Take advantage of good tasty tomatoes as the season for them goes by in a blink.
Ingredients:
1/2 Cup Olive Oil, plus more to drizzle
8 cloves garlic, crushed
6 cups tomatoes, rough chop
Zest and juice of 1 lemon
1 cup fresh basil, plus more to garnish
Salt & pepper
1lb Angel Hair Pasta
Fresh grated Parm
In a sauce pan over medium heat, add in the olive oil. Once is has a shimmer, add in garlic and sauté just until fragrant and slight brown. Add chopped tomatoes. Season with salt and pepper. Cover pan and simmer for about 10 minutes. Once the tomatoes breakdown, gently mash them into a sauce. Simmer with the lid off for 10 more minutes. Stir in zest and juice of lemon and basil.
Heat a large pot of water to a boil. Add a lotta salt, think ocean. Drop in pasta and cook until Al dente.
Add Pasta to the sauce. Coat it well with the sauce. Serve it in a bowl with a drizzle of olive oil, basil leaves, and as much parmesan cheese as you like!
Serves 6 to 8.
