Bacon Cheeseburger Bowl

I really love all things Bacon Cheeseburger and there is just something wonderful about eating all the flavors of a delicious Bacon Cheeseburger in a big bowl. This recipe checks off all the flavor boxes, sans the bun. Crunchy cold iceberg lettuce, sharp cheddar cheese, seasoned juicy beef, crispy bacon, sweet grape tomatoes, thinly sliced red onion, dill pickles, and the special sauce are sure to delight your tastebuds. There is nothing fancy or novel about this recipe which makes me love it even more. It's easy to prep, full on protein, full on flavor, and so satisfying. The thing that really pulls it together is the burger sauce. I like to drizzle it on all the ingredients and maybe even eat a little straight off the spoon.

Serves 2-3
INGREDIENTS
THE BOWL:
1 tbsp olive oil
1lb ground beef, I like fatty ground beef for this
1/2 red onion, 1/4 chopped, 1/4 sliced
1 tsp garlic powder
1/4 tsp smoked paprika
1/2 tsp sea salt
1/4 tsp pepper
1/2 head iceberg lettuce, chopped
12 grape tomatoes, sliced in half
1/2 cup pickles, maybe a few more if you like extra
2 to 3 sliced cooked bacon, chopped
1/2 cup cheddar cheese, shredded
THE BURGER SAUCE:
3 tbsp mayonnaise
2 tbsp plain Greek yogurt
1/8 cup dill pickles, minced
2 tbsp pickle juice
1 tsp dijon mustard
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 smoked paprika
2 tbsp tomato paste or ketchup
good pinch sea salt
DIRECTIONS:
Heat skillet over medium heat and add olive oil. Add in the ground beef and chopped onion, garlic powder, smoked paprika, break apart the beef, and sauté meat is browned and cooked through.
In a small bowl, whisk together all the sauce ingredients.
In 2 to 3 serving bowls or containers, divide up the lettuce, tomatoes, pickles, bacon, onions, cheese, and sautéed beef. Drizzle on the desired amount of burger sauce.
