Baked Chicken Nuggets

Ever get a craving for crispy chicken nuggets? Yeah, me too! These baked chicken nuggets are the perfect high protein answer to crush that craving that hits from time to time. Crispy on the outside, juicy on the inside, and just the right amount of savory deliciousness. Made with ground chicken, they're quick and easy to whip up for a hardy snack or as part of a main meal. Plus, this recipe is ideal for people who are in need of something that is grain and gluten free. Grab your favorite dipping sauce and try them!


Makes 4 Servings (4 Nuggets per serving)


The Ingredients:

1lb Ground Chicken

1/4 tsp Dried Oregano

1/4 tsp Dried Parsley

1/4 tsp Dried Basil

1 tsp Garlic Powder

1/2 tsp Smoked Paprika

1 tsp Sea Salt

1/4 tsp Pepper

1 Egg

1/2 Cup Almond Flour

1/2 Cup Tapioca Flour or Arrowroot*

Cooking Spray


The Method:

  1. Preheat oven to 400 degrees F. Line. a rimmed baking sheet with parchment. Generously spray the parchment with cooking spray and set aside.

  2. In a medium bowl, add the chicken and all the ingredients except for the tapioca flour. Mix well to combine.

  3. To another bowl, add in the tapioca flour or arrowroot and. agood pinch of salt and pepper.

  4. Using a spoon or mini scoop, shape the mixture into 16 nuggets and coat each nugget in to the tapioca flour. Place them evenly on to the prepared baking sheet. I like to scoop and coat the nuggets one at a time.

  5. Lightly spray the nuggets with more cooking spray.

  6. Bake for 8 minutes. Remove from oven. Flip the nuggets and bake for 10 more minutes.

  7. Allow the nuggets to cool slightly before serving.
