Bakery-Style Apple Cinnamon Loaf

This Apple Cinnamon Loaf is reminiscent of a bakery treat yet with a healthier twist. It features a crunchy cinnamon sugar topping and a moist and fluffy center filled juicy apple cinnamon flavor. Sweetened with just the right amount of honey and ripe bananas and enriched with protein to keep you satisfied longer, this loaf is easily prepared in just one bowl. This recipe is not only a treat for the taste buds but it also delights the senses with its warm and inviting aromas that fill the kitchen while baking. When I make this, I typically make two loaves since it vanishes quickly and is great to share with friends and family.
The Ingredients:
2 ripe bananas, mashed
1/2 cup melted unsalted butter or coconut oil
1/2 cup honey
1 egg
1 tbsp vanilla extract
1 tbsp vanilla paste (optional)
1 cup flour
1/2 cup vanilla or chocolate protein powder
1 heaping tsp cinnamon
1/2 tsp sea salt
2 apples, diced small
1 tbsp cinnamon sugar
The Plan:
Preheat oven to 375°F.
Line a 9"x 5" loaf pan with parchment paper and spray with oil. Set aside.
In a large bowl, whisk together the bananas, butter/oil, honey, egg, vanilla extract, and vanilla paste.
Add the flour, protein powder, cinnamon, baking powder, and salt. Stir together until just combined. Do not over mix the batter.
Gently fold in the apples.
Pour the batter into the prepared pan.
Sprinkle the top with the cinnamon sugar.
Bake 50 - 55 minutes or until a toothpick inserted comes out clean. Ovens vary. Begin to test the loaf at 45 minutes.
Cool 10 minutes before slicing.
Makes 1 Loaf. About 12 Slices.
