Celery and Apple Salad

This salad is so straightforward that I'm almost reluctant to share it, yet it's incredibly delicious. Once you taste it, you'll probably find yourself craving it repeatedly. The combination of thinly sliced celery, crisp sweet apples, parmesan cheese, dates, pistachios, all lightly dressed in a lemon honey vinaigrette, creates a perfect combination of flavors. Think crunchy, sweet, and salty flavors. It's one of those dishes that's simple enough for everyday, and sophisticated enough to serve to guests.
The Ingredients:
Juice of one lemon
1/2 tsp sea salt
1/4 tsp pepper
4 tbsp olive oil
1 tsp dijon mustard
1 tbsp honey
1/4 of a red onion or 1 shallot, thinly sliced
6 to 8 ribs of celery, washed and thinly sliced in the bias
2 small apples, diced
1/2 cup roasted pistachios (or any nut that you love)
1/3 cup shaved parmesan
1/3 cup dates, pitted and chopped (about 4 to 6)
The Plan:
In a large serving bowl, whisk until combined the lemon juice, salt, pepper, olive oil dijon mustard, and honey. Toss in the onions an allow them to sit for a few minutes to marinate.
Top the dressing with the celery, apples, nuts, parmesan, and dates.
When ready to serve, toss everything to evenly coat all the ingredients.
Enjoy! xx
