Marinated Summer Squash & Tomato Salad with Basil and Mozzarella


Summer Squash and Tomates

This time of year when the produce is rolling in all I really want to do is keep things simple, put some olive oil and salt on it, and call it a day. It doesn't get better than this. Try this recipe when you have an abundance of zucchini and summer squash.


The Ingredients:

2 Yellow Squash, thinly sliced

Zest and juice of 1 Lemon  

Sea Salt

2 to 3 Tomatoes, sliced 

Olive Oil, measure with love 

4oz. Fresh Mozzarella, break it up into bite sized pieces 

4 to 6 Basil Leaves, thinly sliced 


Simple Ingredients are the best.

The Plan:

In a large bowl, add in the Squash, lemon zest, and a good pinch or two of Sea Salt. Toss with to coat the Squash. Allow to rest for about 5 minutes. On a serving dish, arrange the Squash, tomatoes, and Mozzarella. Drizzle on a generous amount of olive oil, squeeze on a little lemon juice, and garnish with Basil. That's it!
