Let's Taco 'bout one of my favorite meals... Shrimp Tacos! (Sorry for the cheesy pun but I had to.) Shrimp Tacos are my number one favorite taco to make and eat. I have made this recipe no less than 100 times and it is always well received. In fact, I had to do a ton of extensive research when I developed this recipe. How? It was really challenging and I had to make a lot of sacrifices by ordering tacos at my favorite restaurants whenever I saw them on a menu!
The ingredients are simple but the flavors are big. The best part is that is that these healthy tacos are whipped up quickly on a sheet pan. Most of the ingredients are simply tossed on a sheet pan, roasted, and in the blink of the eye dinner is on the table in no time. All these things are a win in my book!
What makes a great Shrimp Taco?
1. For starters, you guessed it, Shrimp! Besides being my favorite seafood, shrimp are easy to find in most grocery stores and incredibly delicious. In this recipe they stay slightly juicy and compliment all the flavors used.
2. The veggies. I keep it simple. One large onion, one red pepper, one orange pepper, one yellow pepper. These flavors don't overrule the shrimp and they look like a mini rainbow. We eat with our eyes and these are definitely pleasantly appetizing to look at.
3. The Spices. You'll find the usual suspects in this recipe. The classic blend of cumin, coriander, garlic powder, and Mexican seasoning is always a good move when making tacos. Of course, a little sea salt and freshly ground pepper always help tie everything together.
4. Lime and Cilantro. These two ingredients are essential in my book. Both of them make the whole recipe come alive! I love to zest, juice, and roast the limes. You'll be amazed at how much flavor all of this adds to your tacos.
5. The Fixin's! Here's where the real party starts! The sky is the limit. Think of any and all of your favorite garnishes and have at it. For me, I have to have crunch. Thinly shredded cabbage or iceberg lettuce, and radishes are a must if you want maximum crunch. After crunch, I'm all about avocado or guac, salsa, cheese, more lime, more cilantro, and to wrap it up it has to be corn tortillas charred with a little flame!
Dinner doesn't get much easier than this and tacos should never just be on Tuesday when they're this good! I think you'll agree after the first bite.

Shrimp Tacos
Ingredients
1lb Shrimp, cleaned/peeled
Three peppers, seeded/thinly sliced
1 onion, thinly sliced
1/4 cup Olive oil
1 tsp Mexican seasoning
1 tsp cumin
1 tsp ground coriander
1 tsp garlic powder
Zest & juice of 3 limes
S & P
1/4 to 1/2 cup cilantro, chopped
Preheat oven 425. On a large rimmed baking sheet pan toss all the above ingredients until everything is evenly coated. Roast for 12 to 15 min or until shrimp turn pink. If you'd like, hit the pan under the broiler to char it a bit. Serve it up with all your favorite fixings. I love charred toasted corn tortillas, fresh lime, cilantro, guac, salsa, and radishes. The basics of this will never let you down.
Tip. Sub out the shrimp for steak, chicken, or beans. Cooking times may vary.
