Chicken Caesar Salad Pizza

I frequently find myself longing for a tasty chicken Caesar salad and pizza. The combination of these flavors always hits the spot and makes for a fantastic meal. This simple recipe is rich in protein and fulfills all those cravings--it's hearty, crunchy, savory, and will leave you feeling pleasantly full and nourished.
The Crust.
Let's begin with the pizza component. The crust is made from ground chicken. Although this is quite different from the traditional pizza dough composed of refined flour, yeast, and water, ground chicken offers a high-protein, nutrient-dense alternative. This protein-rich base not only contributes to a more balanced meal but also helps maintain a feeling of fullness and satisfaction for longer periods. Additionally, the simply seasoned ground chicken crust serves as an excellent foundation for adding flavor and acts as the perfect vehicle for Caesar salad. It results in a crispy, golden-brown crust that is both sturdy and tender. The contrast between the savory chicken crust and the refreshing crunch of the salad ingredients creates a delightful harmony of textures and flavors.
The Caesar.
I'm a sucker for a good Caesar salad, and I will tell you that once you start making your own dressing, you'll never want a store bought bottled version again. The beauty of homemade dressing lies not only in its freshness but you have full control of the ingredients. I like to switch up the dressing recipe depending on how I'm serving up the salad. For this recipe I like to make the dressing with a high quality olive oil and plain Greek yogurt, which provides not only a creamy texture but also a little extra protein. Additionally, I'm using shredded chopped cabbage in place of the traditional romaine. The cabbage holds up really well for leftovers and it's higher in fiber than romaine lettuce. If you don't like cabbage, don't worry! You can easily use any greens that bring you joy. Ultimately, the versatility of this recipe allows you to experiment and make it your own.
Time To Make It!
The Ingredients:
For the Crust:
1 lb. ground chicken
1 tsp garlic powder
1 egg
1/2 tsp sea salt
1/4 tsp chili flakes
1/2 tsp smoked paprika
1 tsp oregano
1/2 cup grated parmesan cheese
For the Caesar Salad.
3 tbsp olive oil
3 tbsp plain Greek yogurt
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 tsp anchovy paste
juice of 1 lemon
1/2 tsp garlic powder
1/4 cup grated parmesan cheese
1/4 tsp chili flakes
Croutons, optional
Shaved or grated parmesan to garnish
The Plan:
Make the Crust.
Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
In a bowl, mix all the crust ingredients until combined. Divide into four portions/balls. Add the crust to the baking sheet and use the bake of a spatula to spread each ball down into a thin layer.
Bake for 15-20 minutes or until slightly browned.
Prepare the Caesar Salad.
In the bottom of a large bowl, whisk together the olive oil, yogurt, Dijon, Worcestershire sauce, lemon juice, anchovy paste, garlic powder, parmesan cheese, and chili flakes.
Add in the sliced cabbage and toss until combined.
Assemble to Pizza.
Place one of the chicken crusts on a plate. Top with the Caesar salad, croutons, and shaved parmesan.
