Easy Sheet Pan Fish Tacos

There are days when dinner time is fast approaching, I'm running out of steam to make something, I don't have a plan of what to make, and everyone is getting hungry. That's when sheet pan dinners swoop in for the rescue. Easy Sheet Pan Fish Tacos are one of my favorites. Actually, who am I kidding. I love all things tacos. These are stuffed with cod, a variety of peppers, red onions, the perfect amount of seasoning, and a hint of lime. Eat them up with all your favorite taco toppings for a fun and easy meal. Healthy, big flavor, and minimal cleanup meals like this are not only my best friend but an instant cure to quiet down anyone pacing around the kitchen with a bad case of "I'm starving! Is dinner ready yet?" Enjoy!

Serves 3 to 4

The Ingredients:

  • 1 to 1 1/4 lbs cod loins, sliced into 1/2 inch slices.

  • 3 peppers, seeded and thinly sliced

  • 1 red onion, thinly sliced

  • 1/4 cup olive oil

  • 3 limes, use the zest and juice of 2, cut the third into wedges for serving

  • 1/4 cup cilantro, chopped


The Seasoning:

  • 1 tsp Mexican seasoning or cayenne pepper

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp garlic powder

  • 1/4 tsp oregano

  • 1/4 tsp smoked paprika

  • 1/2 tsp sea salt

  • 1/4 tsp pepper


The Method:

  1. Preheat over to 425F degrees. Line a rimmed sheet pan with parchment of foil for easy cleanup. Set aside.

  2. In a small bowl, whisk together all the ingredients for the seasoning. Set aside.

  3. Arrange the fish in a single layer in the middle of the prepared sheet pan. Evenly place the onions and peppers on either side of the fish.

  4. Drizzle the olive oil, lime zest and juice evenly over the fish and vegetables. Evenly sprinkle the seasoning over everything. Toss to coat.

  5. Roast for 10 minutes. Remove from oven and give the veggies a quick toss. Roast for 10 more minutes or until the fish is cooked through and fork flakey.

  6. Serve with all your favorite taco fixings. I love to make a taco using a warmed corn tortilla filled with mashed black beans, salsa, cilantro, lime juice, and sliced radishes for a little crunch.


*Note: You can use any protein you love. Cooking times may vary. I've posted a similar recipe for shrimp tacos. Have some fun mixing up the veggies too.
