Tortilla Baked Eggs

If you love everything eggs and omelettes you need to make tortilla baked eggs. This is loaded with protein, good carbs, healthy fat, and a ton of fun flavors. I like to give it a Mediterranean twist by using grape tomatoes, crumbly feta, and a mix of Spanish and Kalamata olives. Don't let the fun stop there as any of your favorite omelette ingredients will do the trick. Cottage cheese is blended in with the eggs to create not only a fluffy filling but it also bumps up the protein to keep you satiated and helps support muscle maintenance and growth.




Ingredients:

  • 1-8in. Tortilla ( I love the whole wheat low carb variety as they tend to be high in fiber.)

  • 1 Egg or 3 Eggs and skip the egg whites.

  • 1/2 Cup Egg Whites

  • 1/3 Cup Cottage Cheese

  • 6 Olives, sliced ( I love a mix of Spanish and Kalamata)

  • 1/2 Cup Grape Tomatoes, sliced

  • 2 tsp Feta Cheese

  • 1 tsp Fresh Oregano

  • Salt & Pepper to taste



The Method:

  1. Preheat oven to 350 degrees F.

  2. Place the tortilla in a greased small pie plate that fits the tortilla. This works as a crispy crust.

  3. In a mixing bowl, whisk in the eggs and cottage cheese until well blended. Season with salt and pepper.

  4. Pour the egg mixture into the pie plate with the tortilla.

  5. Evenly distribute the olives, grape tomatoes, feta cheese, and sprinkle with oregano.

  6. Bake for 25 to 30 minutes or until the eggs are just set.

  7. Remove from oven and allow to cool for 5 minutes before serving.

  8. Slice into wedges.
