Ginger Soy Cod with Mixed Greens -Flavorful and Easy to Make

If you love a great seafood dinner that is delicious and doesn't take forever to make then add this Soy Ginger Cod recipe to your weekly rotation or make when you're hosting a dinner party. The Asian inspired flavors of soy, citrus and ginger are deliciously bright and fresh. The simple marinade is perfect for the Cod, (or any seafood), and also doubles for a lovely vinaigrette to enjoy with mixed greens. Whether you're a seasoned chef or just starting out this dish is sure to please.

Versatile Side Options. As mentioned, I love to serve this with mixed greens using the same marinade but it's also great with sticky rice and most vegetables.
The Ingredients:
1lb. Cod Loins, cut into 3 to 4 equal pieces
1/2 large shallot, finely minced
1 inch piece of ginger, finely minced
juice of 1 lemon
juice of 1 lime
6 tbsp extra virgin olive oil
2 tbsp tamari or soy sauce
1 tbsp honey
pinch of sea salt and pepper
For the Greens:
8 oz. Mixed Greens of choice
2 Carrots, grated
4 tbsp slivered almonds

The Plan:
In a small bowl, whisk together the shallot, lemon, lime, oil, tamari, honey, and salt and pepper.
Place the cod in a ceramic or glass rimmed dish. Pour half the marinade over the fish. Toss the fish gently to coat the sides of each piece. Allow the fish to marinate for at least 30 minutes in the refrigerator. Save the reserved marinade to use as a dressing for the mixed greens.
Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper. Lift the fish out of the marinade and all most of the liquid to drain off. Evenly space out the fish on the prepared baking sheet.
Roast the fish for 12 to 15 minutes or until flakey and slightly browned on top.
Place the remaining marinade/vinaigrette in the bottom of a large bowl. Top with the greens, carrots, and almonds ( Or any ingredients that brings you joy. Toss the greens just before serving.
