Pumpkin Pie Bowl

This bowl has all the fall flavors. It's comforting, creamy, spicy, and has a little crunch. The fiber from the pumpkin puree blended with the protein from the Greek yogurt will keep you feeling satisfied. One of my favorite things about this recipe is that it comes together in minutes. I love to make four servings at a time and store them for a quick and healthy "on the go" meal option. Also, it's fun to change up the pumpkin for sweet potato or butternut squash puree.


The Ingredients:

3/4 Cup 2% Greek Yogurt

1/2 Cup Pumpkin Puree

1/2 tsp Ground Cinnamon, (like it spicy add 1 tsp Cinnamon)

1/2 tsp Ground Ginger

1 tsp Pure Maple Syrup


Topping:

3 Tbsp Granola or Pepita Seeds


The Plan:

In a bowl, add the Greek yogurt, pumpkin puree, spices, and maple syrup. Whisk until completely blended. Chill for at least 30 minutes. Add you favorite toppings.

Serves 1
