Healthy Meal Prep Egg Bites

I love eggs for breakfast and for busy mornings or when traveling I love to prep these Egg Bites. Unlike the egg bites that you'll find at your favorite coffee chains that are filled with artificial and processed ingredients, these contain real ingredients that are high in protein and a great source of fat to keep you fueled well into lunch. In fact, if you read the list of ingredients that are in most coffee chain egg bites you'd probably think twice before consuming them.


This recipe is so easy to make and the end result is an egg bite that is fluffy, creamy, travels well, and only takes seconds to reheat. Add any of your favorite omelette fixings or just enjoy their simplicity with the addition of sea salt and pepper, and your favorite cheese. This is real food that not only tastes great but they will also nourish you from the inside out.



The Ingredients:

  1. 18 Large Eggs

  2. 1 Cup Cottage Cheese

  3. 3/4 tsp Sea Salt

  4. 1/4 tsp Pepper

  5. 1 Cup Cheddar Cheese, shredded



The Method:

  • Preheat oven to 300F. Fill a 13 x 9 inch oven safe dish with three quarters of water and place on the bottom rack of your oven. This will help steam your egg bites to keep them fluffy and creamy.

  • Grease two muffin pans with butter or cooking spray and set aside.

  • Add the eggs, cottage cheese, sea salt and pepper to a blender or food processor. Blend until smooth and creamy. About 30 seconds. It should have a beautiful cream color.

  • Gently pour the egg mixture into the prepared muffin pans filling each section 3/4 of the way.

  • Sprinkle each section with a little of the shredded cheddar.

  • Bake for 30 minutes or until the center of each egg bite is just best and still a little soft.

  • Allow to cool about 5 minutes.

  • Run a knife around each egg bite to loosen it from the pan and place on a rack to cool.

  • Store in the fridge for up to 5 days.


To reheat, microwave the egg bites for 30 seconds.

Macros based on 3 Egg Bites: Calories 241. Carbs 1.7g. Fat 13.8g. Protein 27g.


Be creative! Feel free to add in such ingredients as spinach, mushrooms, sun dried tomatoes, bacon, and sausage. Switch up the cheeses by adding feta, Swiss, or goat cheese. There is no wrong way to make them.
