Cannellini Beans with Sundried Tomatoes & Artichokes

Whether you eat them in soups, on salads, or as a side dish, beans are anything but boring! Nutrient dense and high in fiber they easily transform into something truly delicious.
Here's one of my favorite ways to whip them into shape.
Cannellini Beans with Sundried Tomatoes & Artichokes.
This quick dish comes together easily with your favorite pantry staples, lemon zest, fresh herbs, olive oil, artichokes, and sun-dried tomatoes.
2 - 15 oz can Cannellini beans, drained and rinsed
1/4 cup mixed herbs. I love parsley and thyme
3 tbsp Olive Oil
Zest and Juice of a lemon
2/3 Cup Sundried Tomatoes in oil, drain and chop
2/3 Cup Articoke Hearts in water, drain and sliced in half
Whisk all the ingredients except for the beans into a large bowl. Gently fold in the beans. The long this dish sits the better it tastes.
