Tender Chuck Roast: The Secret to Perfect Comfort Food

You don't need an expensive cut of beef to make a restaurant worthy meal at home. Delicious food doesn't have to be complicated and this easy chuck roast recipe proves this time and time again. It's not only a delicious cut of meat, but it's very forgiving. What I love most is that because it's so high in fat, it's foolproof to prepare.


I like to just season it with a generous amount of sea salt and pepper, and roast it low and slow. This breaks down the collagen and connective tissue and makes the meat super tender. We're talking melt in your mouth good! Next you simply shred the beef, toss it in the pan juices, increase the oven temperature, and return it to the oven to crisp up the beef. Violà! It's that easy. You're left with incredibly delicious melt in your mouth beef that you can pair with any sides you love. It's extremely versatile. This is great to serve as is or feel free to put any twist of seasonings you love. You can add a Spanish flare to the seasoning for tacos or roast it with shallots, carrots, dry red wine, and garlic for a more Sunday dinner feel. Anything goes!


The Ingredients:

1 - 4lb Chuck Roast, room temp and pat it completely dry. This is key to help as the dry meat helps it brown. 

2 tsp sea salt, be super generous with the salt. Add more if needed.

1 tsp pepper or to taste


The Method:

1. Preheat oven to 325ºF. 

2. Generously season the beef on both sides. Don't be shy to add more salt if needed.

3. Place the beef in a Dutch oven or oven safe dish. Cover with lid or cover tightly with heavy-duty foil. 

4. Roast 1 hour per pound. (4lbs = 4hours) (I'm a mathematician! 😂 )

5. Remove from oven. Increase oven temperature to 425ºF. 

6. Shred the beef into bite sized pieces and toss in the pan juices. 

7. Roast uncovered until the meat gets a little crispy on top. About 20 to 30 minutes. I like to toss it after 20 minutes and roast it again for about 20 minutes more to get plenty of tender crispy bites. 


Makes 4 to 6 servings


Serve it with anything you love. It's great with roasted baby potatoes, green beans and a simple salad. I also love it for breakfast with over easy eggs. The sky's the limit when it comes to Chuck Roast.
